Let’s take a look at the main ingredients:
- Chicken
- Bell peppers
- White onion
- Olive oil
- Spices
These are all natural, nutritious food sources. Each have their own list of health benefits and can be included in a variety of recipes for extra flavor, nutrients, and texture.
But what about the Oil? Isn’t it laden with unhealthy fats?
Many people worry about trans fats and saturated fats when it comes to cooking oils. However, these fats are associated with the industrial processes of hydrogenation which modifies the chemical structure of oils.
High-quality oils (like olive oil and avocado oil) provide essential fatty acids, vitamins, and they are a great source of energy.
So, don’t dismiss the role of oils in your diet. Cook with them! Embrace them as a natural and delicious source of essential nutrients, and appreciate the richness they bring to your meals.

Sugar is what makes food unhealthy.
Traditional chicken fajitas are served with two flour tortillas and white rice (starchy carbs), which digest very similarly to sugar.
Add 91g of starchy carbs to this recipe, and you’re looking at heartburn with an energy crash. (And you’ll be scouring the pantry for your next sugar snack within the hour.)
Substitute regular flour tortillas with a low-carb alternative and omit the rice to make this recipe pure nourishment. The ingredients provide vitamins, minerals, protein, and quality, whole-food energy.

Air Fryer Chicken Fajitas Tips
1. Have leftover chicken?
Use it to make easy chicken tortilla soup, salsa chicken, or white chicken chili to enjoy throughout the week!
2. Meal prep
Make a double batch of fajitas, and store leftovers in airtight containers in the fridge for up to 3-4 days or in the freezer for up to 9 months.
3. Swap out the protein
Not in the mood for chicken? Use shrimp instead! Or, opt for a vegetarian option with tofu or mushrooms in place of the meat. Just be sure to adjust the cooking time as needed, depending on the type of protein.
4. Switch up the servings
As mentioned, we like to serve these fajitas in low-carb tortillas or lettuce wraps. However, you could also enjoy them over a bed of greens for a salad or a bowl of cauliflower rice for takeout inspired, low-carb fajita bowls.
