Chocolate Toffee Tips
Add nuts
Slivered almonds and pecan pieces are the common nuts in toffee. To include them in your recipe, cover the bottom of your baking dish with nuts, and proceed through the recipe like normal. The nuts will be contained within the sweet butter base.
Use quality butter
Chocolate toffee made from quality butter is rich, flavorful, and buttery smooth. Good butter matters (not to mention it’s more sustainable and humane). Check your grocery store for “free range” butter.
Use a 9×13 baking dish
The size of your baking dish determines the thickness (and therefore softness) of your chocolate toffee. We like the 9inx13in baking dish, but anything close to 117 square inches will work.

Don’t worry about hard toffee with this recipe. This toffee recipe yields a thin, soft toffee that is gentle on the teeth. Even straight from the fridge, this chocolate toffee is buttery smooth.
Keep leftover toffee in the fridge
Even at fridge temperature, this chocolate toffee stays soft and light. In fact, we recommend serving it cold. Break your toffee into bite-sized pieces, and store them in our favorite glass tupperware.
Chocolate Toffee

- 1 cup Butter (2 sticks)
- 1/2 cup Granular Sugar Replacement (Lakanto)
- 1 cup Sugar-Free Chocolate Chips (Lilly’s)
Instructions
- Add butter and sugar into a small pot.
- Heat butter and sugar to 300 degrees F: turn burner to medium low; add candy thermometer.
- Stir regularly.
- Line an 8in x 13in baking dish with parchment paper.
- Remove pot from heat when thermometer reads 300 degrees F (hard crack).
- Promptly pour into lined baking dish.
- Allow the butter, sugar mixture to harden (let sit for about 5 minutes).
- Sprinkle chocolate chips evenly over the warm butter base.
- Cover the baking dish with tinfoil. Let sit for 5 minutes. The chocolate chips are melting.
- Remove tinfoil. Spread the melted chocolate chips using a silicone spatula.
- Refrigerate until completely cooled (about 60 minutes).
- Break chocolate toffee into pieces and serve.
