Peanut Butter Overnight Oats Tips
1. Need a nut-free option?
To make these peanut butter overnight oats nut-free, swap out the almond milk with oat milk, hemp milk, or even cow’s milk. Then, use a seed butter like sunflower seed butter or even tahini instead of peanut butter. You’ll still get the same rich flavor and creamy texture but with none of the nuts!
2. Use different chocolate chips
We love the classic peanut butter and milk chocolate combination using these sugar-free chocolate chips. However, feel free to switch up the flavor with dark chocolate or white chocolate varieties, too!
3. Have leftover chocolate chips?
Save them to make another batch of these peanut butter overnight oats at a later date. Or, use them up, and treat yourself to a batch of chocolate chip cookies, chocolate-covered jam pucks, or chewy fudge brownies!
4. Add it to your meal prep rotation
One of the best things about this overnight oats recipe is that when stored in an airtight container it stays fresh in the fridge for up to 5 days. So, go ahead and make a double batch! Your future self will thank you when you have quick meals ready to go all week.

Peanut Butter Overnight Oats (Chocolate Shell)

Low Carb "Oats"
- ¼ cup hemp seeds
- 1 Tbsp flaxseed meal
- ¼ cup chia seeds
- 1½ Tbsp natural peanut butter
- 1 cup almond milk
- ¼ tsp – vanilla
- 1-2 full droppers Stevia Drops
Chocolate Shell
- 2 Tbsp – Sugar-Free Chocolate Chips (Lilly’s)
- ¼ tsp – Coconut Oil
Instructions
- Add Chia seeds, hemp seeds, flaxseed, peanut butter, almond milk, vanilla, and stevia to a bowl. Mix well. Cover and refrigerate for 30 minutes or overnight.
- Divide chia mixture into two small containers.
- Add chips and coconut oil in a small bowl. Place the bowl in the microwave and cook for 30 minutes. Mix and continue to melt in 30 second increments till chocolate is melted.
- Add chocolate on top of each of the chia mixture containers. Cover and place in the freezer for 10 minutes to harden.
