Cucumber Salmon Boat

Our cucumber salmon boats are light and refreshing without skimping on bold, satisfying flavor. Air-fried salmon is layered in a cauliflower rice-filled cucumber boat and topped with spicy mayo.   


– Skinless salmon – Olive oil – Paprika – Garlic powder – Cucumbers

Place the salmon on a plate. Drizzle with olive oil. Sprinkle paprika, garlic powder, and salt on the salmon.


Place a layer of parchment paper on the bottom of the air fryer basket. Place the salmon pieces in the basket making sure not to have them touch. Cook at 400 degrees for 5-6 mins.


While the salmon is cooking. Cut each cucumber in half lengthwise and scoop out the seeds with a spoon, creating a hollow space in the center. You should have four cucumber “boats.”


Place cauliflower rice in a microwave safe bowl. Cook on high for 2.5 to 3 minutes.


Add mayo and hot sauce into a small bowl. Mix well.


When salmon is finished cooking, flake into bite size pieces. In a medium bowl, combine the flaked salmon, Greek yogurt, fresh dill, lemon juice, salt, and pepper. Mix well to combine all the ingredients.
