Spinach Artichoke Dip Bites

This bite-sized appetizer features a fluffy, low-carb dough filled with creamy spinach artichoke dip. Baked in the oven and served warm, these bites are soft, cheesy, and full of veggies!

INGREDIENTS

– Mozzarella – Almond flour – Cream cheese – Spinach – Artichoke hearts

Grease a 24-hole mini muffin pan with butter.

Make the dough by placing the mozzarella and cream cheese in a bowl and microwave for 1 minute, stirring, and then cooking for another 30 seconds.

Let the dough cool slightly and set, then knead it. If it’s too sticky, sprinkle a bit more almond flour while kneading on top of parchment paper.

Roll it out, sandwiched between pieces of parchment paper.

Use a small jar lid to cut out 24 circles.
