Add Chia seeds, hemp seeds, flaxseed, peanut butter, almond milk, vanilla, and stevia to a bowl. Mix well. Cover and refrigerate for 30 minutes or overnight.
Divide chia mixture into two small containers.
Add chips and coconut oil in a small bowl. Place the bowl in the microwave and cook for 30 minutes. Mix and continue to melt in 30 second increments till chocolate is melted.
Add chocolate on top of each of the chia mixture containers. Cover and place in the freezer for 10 minutes to harden.
