Peanut Butter Overnight Oats (Chocolate Shell)

Ingredients

Low Carb "Oats"

  • ¼ cup hemp seeds
  • 1 Tbsp flaxseed meal
  • ¼ cup chia seeds
  • Tbsp natural peanut butter
  • 1 cup almond milk
  • ¼ tsp - vanilla
  • 1-2 full droppers Stevia Drops

Chocolate Shell

Instructions

  • Add Chia seeds, hemp seeds, flaxseed, peanut butter, almond milk, vanilla, and stevia to a bowl.  Mix well.  Cover and refrigerate for 30 minutes or overnight.
  • Divide chia mixture into two small containers.
  • Add chips and coconut oil in a small bowl.  Place the bowl in the microwave and cook for 30 minutes.  Mix and continue to melt in 30 second increments till chocolate is melted.
  • Add chocolate on top of each of the chia mixture containers.  Cover and place in the freezer for 10 minutes to harden.
