Lemon Garlic Butter Salmon Sheet Pan

Ingredients

  • 4 salmon filets about 6 ounces each
  • 4 Tbsp unsalted butter melted
  • 4 cloves garlic minced
  • 1 lemon
  • 1 tsp fresh/dried dill
  • Salt and black pepper to taste
  • 2 cups veggie of choice
  • 2 cups asparagus spears trimmed
  • Fresh parsley chopped (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Zest 1 tsp of the lemon and then slice into rounds.
  • In a small bowl, combine the melted butter, minced garlic, lemon zest, and dill. Stir well to combine.
  • Place the salmon filets on the prepared baking sheet and season them with salt and black pepper to taste.
  • Brush the garlic butter mixture generously over the salmon filets, making sure to coat them evenly.
  • Arrange the lemon slices on top of the salmon filets and scatter the veggies around the salmon on the baking sheet.
  • Drizzle some of the remaining garlic butter mixture over the asparagus and radishes. Season them with a pinch of salt and black pepper.
  • Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
