Broccoli Fritters (Low Carb)

Ingredients

  • 2 cups riced broccoli
  • 2 eggs
  • ¼ cup diced white onion
  • cup almond flour
  • ½ cup sharp white cheddar this easily could get subbed for any cheese of your liking ½ tsp sea salt
  • ¼ tsp cracked black pepper
  • ¼ tsp garlic powder
  • 4 Tbsp olive oil
  • Garnish: parsley or green onion optional

Instructions

  • Dice/rice cut your broccoli heads, then add this to a bowl with all your ingredients except for the olive oil. Mix.
  • Form the mixture into golf ball size balls - compressing with your hands.
  • Place oil on your pan and set to medium to high heat. In 3-5 minutes place your broccoli fritter balls on the pan - leaving a few inches between them to allow space to flip.
  • Cook for roughly 3 minutes on each side or until the sides are nicely browned and firm. 5. Place cooked fritters on a papertoil lined plate to absorb excess oil.
  • Serve with your favorite dressing like ranch or a few dollops of sour cream. Enjoy!
