Chicken Noodle Soup (crockpot)

Best Homemade Chicken Noodle Soup

Equipment

Ingredients

  • 1 lb Chicken Breast boneless, skinless
  • 4 cups Chicken Broth
  • 2 cups Water
  • 2 medium Carrots peeled and sliced
  • 2 stalks Celery
  • 1 small Onion
  • 2 cloves Garlic
  • 1 tsp Dried Rosemary
  • 1 tsp Dried Rhyme
  • Salt and Pepper to Taste
  • 1 cup Edamame Noodles broken into thirds
  • Fresh Parsley for Garnish optional

Instructions

  • Chop and dice the carrots, celery, onion, and garlic. 
  • Place the chicken breasts, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper in the crockpot.  Pour in the chicken broth and water. Stir to combine.
  • Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and the vegetables are tender.
  • About 5 minutes before serving, add the edamame noodles to the crockpot and simmer. Stir to combine.
  • Garnish with fresh parsley.
