Cucumber Salmon Boats Tips
1. Use a different protein
Not a fan of salmon? Feel free to swap it out with any other seafood you like best. Tuna, white fish, or shrimp would all make great options.
2. Bulk up your meal
This recipe is super filling on its own, but you can never go wrong with an extra side! Try pairing them with chili garlic oil noodles for a complete spread. Then, finish off your meal with peanut butter cottage cheese ice cream or a low-carb cookie skillet to satisfy your sweet tooth!
3. Add different toppings
We included a few topping ideas, but feel free to get creative and switch it up! Additional options like pickles carrots, seaweed, ginger, mushrooms, and asparagus would all taste great.

Cucumber Salmon Boats

- I pd of skinless salmon
- 1 Tbsp olive oil
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp salt
- 2 large cucumbers
- 2 cups Cauliflower rice
- 1/2 cup sour cream
- 2 Tbsp fresh dill chopped
- 2 Tbsp lemon juice
- Salt and pepper to taste
Spicy Mayo:
- 4 Tbsp avocado oil mayonnaise
- 2 tsp hot sauce sauce adjust according to your spice preference
- 2 tsp sesame seeds for garnish
- Additional garnish ideas chopped parsley, sliced avocado, or sliced cherry tomatoes
Instructions
- Place the salmon on a plate. Drizzle with olive oil. Sprinkle paprika, garlic powder and salt and on the salmon.
- Place a layer of parchment paper on the bottom of the air fryer basket. Place the salmon pieces in the basket making sure not to have them touch. Cook at 400 degrees for 5-6 mins
- While the salmon is cooking. Cut each cucumber in half lengthwise and scoop out the seeds with a spoon, creating a hollow space in the center. You should have four cucumber “boats.”
- Place cauliflower rice in a microwave safe bowl. Cook on high for 2.5 to 3 minutes.
- Add mayo and hot sauce into a small bowl. Mix well.
- When salmon is finished cooking, flake into bite size pieces. In a medium bowl, combine the flaked salmon, Greek yogurt, fresh dill, lemon juice, salt, and pepper. Mix well to combine all the ingredients.
- Add the cooked cauliflower to the cucumber boats first.
- Next add the salmon mixture on top.
- Drizzle the spicy mayo on top.
- Add sesame seeds.
- If desired, top the salmon boats with parsley, cherry tomatoes or avocado slices for added freshness and crunch.
