        Ingredients

        • 1 large English cucumbers
        • 16 cherry tomatoes
        • 16 fresh mozzarella cheese balls
        • Chopped fresh basil leaves
        • 1 Tbsp Extra virgin olive oil
        • Salt and pepper to taste
        • 16 Toothpicks or small skewers

        Instructions

        • Prepare the ingredients: Wash the cucumbers and tomatoes. Slice the cucumbers into rounds, each about 1/4 inch thick.
        • Assemble the bites: On a serving platter, begin assembling the cucumber caprese bites by layering a slice of cucumber, followed by a mozzarella ball, and cherry tomato,
        • Drizzle with olive oil: Drizzle a small amount of extra virgin olive oil over the assembled cucumber caprese bites. You can also sprinkle a pinch of salt and pepper over the bites for seasoning.
        • Lastly, sprinkle chopped basil on top.
        • Secure with toothpicks: Once assembled, carefully insert a toothpick or small skewer through the center of each cucumber caprese bite to hold the layers together.
