      Lemon Parmesan Salad Tips 

      1. Add protein

      Make this lemon Parmesan salad a complete meal by topping it off with your favorite protein like pesto chicken, turkey, ham, or hardboiled eggs. 

      2. Include even more nutrients  

      We kept this salad incredibly simple with just a handful of ingredients, but you can easily mix and match different items to add extra nutrients and make it even more filling. For example, tomatoes, onions, mushrooms, and cucumbers would all taste great! 

      3. Add toppings

      Looking for a little more texture? Include toppings like sesame seeds, pumpkin seeds, avocado, or croutons. 

      4. Make it vegan 

      Feel free to swap out the Parmesan cheese with nutritional yeast or a vegan Parmesan alternative to make this salad completely plant-based. 

      5. Have leftover Parmesan? 

      Store it in your fridge for more salads later. Or, use it to make low-carb macaroni and cheese or avocado pesto and knock out meal prep for the week.

        Ingredients

        • 3 romaine hearts lettuce
        • ¼ cup – olive oil
        • 2 lemons zested and juiced
        • 1 cup – finely grated parmesan cheese

        Instructions

        • Wash lettuce and pat dry with a paper towel.
        • Add lettuce and zest in a medium-sized bowl.
        • Season with salt pepper, lemon juice, and olive oil.  Toss to combine.
        • Add parmesan cheese and toss to coat the lettuce with the cheese.
