    A low-carb take on classic pizza bites, this recipe is a fun, nutritious way to enjoy all the comforting flavors of pizza! The bites feature a base of fresh zucchini. Then, we layer on all our favorite pizza toppings before baking them in the oven. 

    From start to finish, the dish takes just 20 minutes or less to make! All you have to do is slice the zucchini, layer, bake, and sprinkle your garnishes on top. 

    Then, you’re left with bite-sized rounds that burst with savory, cheesy flavors that satisfy all your tastebuds. Even better, they’re loaded with vitamins, nutrients, and fiber to keep you satisfied and full until your next meal!

      Zucchini Appetizer Ideas! Best Finger Foods for a Party.

      1. Make it a meal 

      Enjoy these zucchini pizza bites as an appetizer or side dish with main courses like a balsamic chicken skillet, lemon garlic chicken sheet pan, or lemon pepper chicken wings. Or, serve them as a vegetarian main dish with sides such as lemon parmesan salad and low-carb dinner rolls. 

      2. Swap the zucchini

      Not a fan of zucchini? Use eggplant or mushroom caps instead! 

      3. Store leftovers 

      This recipe is best enjoyed right away while the zucchini is fresh. However, if you have leftovers you can store them in an airtight container in the fridge for up to 2 days. Reheat them in the microwave, oven, or air fryer when you’re ready to eat. 

      5. Slice big enough rounds

      Make sure to slice the zucchini rounds thick enough to hold up to the weight of the toppings! Roughly 1 inch wide should do the trick! 

      6. Have leftover zucchini?

        Zucchini Pizza Bites

        Prep Time:5 minutes

        Ingredients

        • 2 large zucchini
        • ¼ cup marinara
        • ¼ cup pesto
        • 4 Tbsp freshly grated mozzarella
        • 1 tsp italian seasoning
        • ½ tsp olive oil
        • 1 tsp grated parmesan
        • 2 Tbsp of diced fresh basil

        Instructions

        • Turn oven to 425 F
        • Slice zucchini ¼ inch slices. Then toss in olive oil and sprinkle with italian seasoning. Place on a parchment covered baking sheet.
        • Dice onion and mushrooms. (you could also add diced bell peppers or sliced olives – in the final images I will show varieties of the toppings, pesto n some and different colored zucchini)
        • Place a small dollop of sauce in the middle of each zucchini, then add a pinch of diced vegetables on top and top with a pinch of mozzarella.
        • Bake for 10-15 minutes or until the cheese melts and is browned.
        • Add grated parmesan and diced fresh basil on top. Enjoy!
