        Ingredients

        • 2 slices low-carb bread e.g., almond or coconut flour-based bread
        • 1 ripe avocado
        • Pinch of salt and pepper
        • Squeeze of lemon
        • 1 tablespoon olive oil or butter for frying eggs
        • 2 large eggs
        • Optional toppings: Red pepper flakes, Cherry tomatoes, halved, Microgreens or arugula, Everything bagel seasoning

        Instructions

        • Toast the low-carb bread slices in a toaster or under a broiler until golden and crisp.
        • Heat olive oil or butter in a non-stick skillet over medium heat.
        • Crack the eggs into the pan and cook sunny-side up, or flip them gently for an over-easy style. Cook to your preferred level of doneness.
        • While the egg is cooking, cut the avocado in half, remove the pit, and scoop the flesh into a small bowl.
        • Mash the avocado with a fork until smooth (or leave it slightly chunky, as preferred).
