• ¼ cup chia seeds

Chocolate Shell

• 2 Tbsp – Sugar-Free Chocolate Chips (Lilly’s)

Instructions

• Add Chia seeds, hemp seeds, flaxseed, peanut butter, almond milk, vanilla, and stevia to a bowl.  Mix well.  Cover and refrigerate for 30 minutes or overnight.
• Divide chia mixture into two small containers.
• Add chips and coconut oil in a small bowl.  Place the bowl in the microwave and cook for 30 minutes.  Mix and continue to melt in 30 second increments till chocolate is melted.
• Add chocolate on top of each of the chia mixture containers.  Cover and place in the freezer for 10 minutes to harden.

Chocolate Covered Jam

Ingredients

• 1½ cups – Fresh (or frozen & thawed) raspberries (1 6 ounce container), divided
• 1 Tbsp – Coconut oil
• 1 Tbsp – Granular Sugar Replacement (Lakanto)
• 1 Tbsp – Chia seeds
• 1½ cups – Semi-Sweet Style Cholocate Chips (Lily’s)
• 2 Tbsps – Freeze-dried raspberries optional

Instructions

• In a bowl, stir and smash together the raspberries, monk fruit sweetener, and chia seeds. Leave some large chunks still intact.
• Scoop out heaping spoonfuls, or 1 tablespoon, of the mixture onto parchment paper or a Silpat, separated into pucks. Freeze until the mixture has solidified enough to be picked up, at least 1 hour.
• Melt chocolate chips and coconut oil together in the microwave. (30 seconds, stir, repeat until melted).
• Take raspberry pucks out of the freezer. Dip the puck into the chocolate mixture making sure to coat all sides. Place the pucks back on the baking sheet.
• Place in the freezer until ready to enjoy! Enjoy straight from the freezer or let sit at room temperature for about 10 minutes until the chocolate is slightly softened.

You won’t find any sugar in this recipe, but you will find coffee! Why? Coffee decreases our taste buds’ sensitivity to bitter flavors while enhancing how we perceive sweetness.

As a result, there is no mocha flavor, only an enhancement of the decadent flavors you look for in a classic brownie. 

Are Chewy Low-Carb Brownies Healthy? 

Let’s look at the main ingredients: 

• Coconut oil 
• Eggs
• Almond flour
• Cocoa powder
• Unflavored gelatin powder
• Sugar-free chocolate chips
• Unsalted butter
• Cream cheese
• Milk

Coconut oil, eggs, almond flour, cocoa powder, and unflavored gelatin powder are natural, nutritious foods. Each has its own health benefits which you can find out more about here. 

But what about butter and cream cheese? What about the added milk? Is dairy healthy?

1. Use room temperature ingredients. 

For easy mixing and quick preparation, let all of your ingredients sit out and come to room temperature before you begin to bake. This helps prevent the batter or icing from becoming lumpy or overworked, ensuring your brownies turn out soft, chewy, and scrumptious. 

2. Avoid overmixing the batter. 

When it comes to making brownies, you want to make sure to combine your ingredients just until they are smooth. Continuing to mix will only result in dense, tough brownies, and we definitely don’t want that! 

3. Add nuts. 

If you prefer a little crunch, sprinkle chopped nuts such as almonds, walnuts, or pecans into the batter. Not only do they enhance the taste, but they also provide a good source of fiber and healthy fats! 

4. Switch up the frosting.  

We used a cream cheese frosting for these chewy low-carb brownies, but feel free to mix and match different ingredients to make the flavor your own. For example, fat-free whipped topping or powdered sugar also make for great toppings. 

5. Got leftover chocolate chips? 

Save them to make a batch of brownies another day. Or, use them to create chocolate chips cookies or sugar-free chocolate toffee!

Chewy Low-Carb Brownies

Equipment

• Glass Baking Dish 8in x 8in
• Silicone Spatula
• Hand Mixer

Ingredients

Wet Ingredients:

• ⅓ cup – coconut oil (melted)
• ⅔ cup – Granular Sugar Replacement (Lakanto)
• 2 large eggs
• 1 tsp – pure vanilla extract
• ¼ cup – cooled brewed coffee or water or milk of your choice

Dry Ingredients:

• ¾ cup – Almond Flour
• ⅓ cup – unsweetened cocoa powder
• 1 Tbsp (or one packet) – unflavoured gelatin powder
• ½ tsp – baking powder
• ¼ tsp – sea salt
• ½ cup – Sugar-Free Chocolate Chips (Lilly’s)

Frosting:

• ½ cup – softened unsalted butter
• ½ cup – softened cream cheese
• ¼ cup – unsweetened cocoa powder
• 1 cup – Powdered Sugar Replacement (Swerve)
• 1-2 Tbsp – of room temperature milk (or plant milk of your choice or room temp coffee)
• ½ tsp – pure vanilla extract

Instructions

• Preheat your oven to 350°F (180°C) and prepare an 8×8 brownie pan with parchment paper.
• In a mixing bowl, stir together the melted and cooled coconut oil, sweetener, eggs, vanilla extract, and cooled brewed coffee until well combined.
• In a separate bowl, whisk together the almond flour, cocoa powder, baking powder, sea salt, and gelatin powder until there are no lumps left.
• Combine the wet and dry ingredients and mix until the batter is smooth. Stir in the chocolate chips.
• Pour the batter into the prepared pan and spread it evenly.
• Bake in the preheated oven for approximately 30 minutes, until the brownies are set in the middle. Be sure not to over-bake the brownies, as they will continue to set as they cool.
• Remove the pan from the oven and allow the brownies to cool completely.
• Then chill in the fridge for a minimum of 30 minutes. (optional but I prefer the brownies chilled)
• While the brownies are chilling, prepare the frosting. In a mixing bowl, beat together the softened unsalted butter and cream cheese until smooth and creamy.
• Add the cocoa powder, powdered sugar-style sweetener, room temperature milk, and vanilla extract to the bowl and beat again until the frosting is light and fluffy.
• Spread the frosting over the cooled brownies using a spatula or knife.
• Cut into squares and enjoy!

Notes

• The brewed coffee can be replaced with water or milk but the coffee really enhances the chocolate flavor.
• The brownies are best in my opinion after being chilled in the fridge because it really enhances the chewy texture! 
• Use parchment paper to line the brownie pan for easy removal and clean-up.
• Ensure that the coconut oil is melted and cooled before adding it to the wet ingredients to avoid cooking the eggs.
• Use a whisk to combine the dry ingredients thoroughly, ensuring that there are no lumps left.
• Do not over-bake the brownies, as they will continue to set as they cool. Check them at the 25-minute mark, and if they are still not fully cooked, check them every 5 minutes.
• When making the frosting, ensure that the butter and cream cheese are both softened before beating them together to prevent lumps.
• Adjust the sweetness of the frosting to your liking by adding more or less powdered sugar-style sweetener.
• If the frosting is too thick, add more milk or coffee to thin it out.
• Store the brownies in an airtight container in the refrigerator for up to a week. They can also be frozen for up to a month.

Unless you’re trying to make these Apple Samoa “cookies” look professional, you don’t need a pipping kit. Simply melt the chocolate in a bowl and use a spoon to drizzle chocolate over your cookies.

2. Core your apple

No, it’s not important for your Apple Samoa “cookies” to have the perfect ring shape. But if that’s what you’re going for, you’ll want to use an apple corer. What’s more, it makes preparation fast and efficient. 

3. Use parchment or wax paper

To make cleanup easy, place your apple slices on a piece of parchment or wax paper before you begin adding your toppings. That way you can easily wrap up and discard any extra nut butter, coconut flakes, or chocolate that happens to fall off. 

4. Use red, yellow, or green apples

Red apples like Honeycrisp and Fuji will lend the sweetest taste whereas Granny Smith and Pink Ladies will be a bit more tart. 

5. Add nuts

If you want a little extra crunch, almond, peanut, pecan, or walnut pieces make an excellent addition to these treats. To incorporate them into the recipe, simply fold them into the nut butter mixture. Or, sprinkle them on top, making sure they’re pressed down firmly enough to stick. Then, proceed with the recipe.

Ingredients

• 2 Apples
• ½ cup Natural Nut Butter of choice
• ½ cup Coconut Flakes

• 1/4 cup Sugar-Free Chocolate Chips (Lilly’s)

Instructions

• Start by adding your nut butter, sugar substitutes, and coconut into a mixing bowl.
• Mix until well combined. Set aside.
• Slice an apple from bottom to top. Keeping the 3-6 large pieces from the middle.
• Using the large end of your metal piping tip, or a knife, cut out the center of each apple slice.
• Pat each slice dry with a paper towel.
• Spoon your peanut butter mixture on the top of each apple slice, and press down gently.
• Melt down your chocolate chips in the microwave, in 30 second intervals, stirring after each, until smooth.
• Use a spoon to drizzle each “cookie” in chocolate. (Or, pour your melted chocolate into a piping bag. Cut the tip off of your piping bag, just enough to allow the chocolate to drizzle out)
• Place in the freezer for 20 to 30 minutes.
• Serve and enjoy.

Chocolate Chip Cookies Tips 

1. Enjoy fresh baked cookies every night

Don’t bake the whole batch of cookies in one go. Scoop out one or two cookies per person, and save the rest of the dough in the fridge. Eat a fresh-baked cookie every night! (And who doesn’t love the smell of cookies baking in the oven?)

Side note: before storing your cookie dough in the fridge, level out the dough’s surface in your storage container. This makes scooping the cookie dough easier. We recommend preparing and storing your cookie dough in a glass mixing bowl with a lid.

2. Let the cookies cool (the way you like)

Let the cookies cool for 5 minutes for a warm gooey center and crisp outer edge. Or you can let the cookies cool completely for a soft, chewy cookie. 

3. How long can I store the cookies?

Store at room temperature for 5 days or in the refrigerator for 7 days.

3. Use a cookie scoop

A cookie scoop serves uniform cookies that bake evenly. If you’re wanting to bake these healthy cookies on the regular, a 1 Tbsp cookie scoop is a welcomed tool. 

4. Use room temperature ingredients. 

To allow for super easy mixing, let your butter, cream cheese, egg, and egg yolk warm and soften room temperature. This helps prevent the ingredients from clumping, creating a smooth batter. 

5. Got leftover chocolate chips? 

Save them for a second batch, or use them to whip up chocolate toffee, too. 

6. Separate the egg white with ease. 

Crack the egg over a bowl, making sure to keep the yolk in one half of the shell. Then, gently transfer the yolk back and forth between each half of the shell, and allow the egg white to fall out into the bowl. Add the yolk to the cookie batter, and store the egg whites in glass tupperware in the fridge to use for candied pecans.  

7. Cover your baking sheet. 

Make clean up easy and prevent waste by covering your baking sheet with a non-stick baking mat. 

8. Want more flavor or texture?

Ingredients

• 1/2 cup – Unsalted Butter softened
• 2 oz – Cream Cheese softened
• 1/2 cup – Brown Sugar Replacement (Swerve)
• 1/2 cup – Granular Sugar Replacement (Lakanto)
• 1 Egg + 1 Egg Yolk
• 1/2 tsp – Vanilla Extract
• 1.5 cup – Almond Flour
• 1/2 tsp – Xanthan Gum
• 1 tsp – Baking Soda
• 1/2 tsp – Salt pink himalayan or sea salt
• 1 cup Sugar-Free Chocolate Chips (Lilly’s)

Instructions

• Preheat oven to 350 F.
• Cream butter and cream cheese until fluffy (we recommend a hand mixer).
• Add Swerve Brown Sugar and Lakanto. Mix. Scrape the sides with a silicone spatula for even mixing.
• Add 1 egg, 1 egg yolk, and vanilla extract. Mix.
• Add dry ingredients (almond flour, xanthan gum, baking soda, salt). Scrape the sides for even mixing.
• Add chocolate chips. Mix.
• Optional, but recommended: Chill cookie dough in the fridge for an hour or overnight for soft, gooey cookies.
• Using a cookie scoop, place even sized cookie dough balls onto a baking sheet lined with a Silicon Baking Mat or parchment paper.
• For a soft gooey cookie, gently squish each scoop into a very thick puck shape. Or, for a more crisp cookie, flatten scoop into a cookie shape.
• Bake for 10 minutes or until golden brown around the edges.
• Let cookies cool for at least 5 minutes. Keep cookies for 5 days at room temperature or 7+ days in the fridge.
