Instructions

• Prepare the avocados: Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
• Mash the avocados: Using a fork or potato masher, mash the avocados to your desired consistency. Some prefer a chunkier guacamole, while others prefer it smoother.
• Add the remaining ingredients: Add the diced onion, diced tomatoes, diced jalapeño peppers, minced garlic, and chopped cilantro to the bowl with the mashed avocados.
• Season with lime juice, salt, and pepper: Squeeze the juice of one lime over the mixture. Add salt and pepper to taste. Gently fold the ingredients together until well combined.
• Adjust seasoning and lime juice: Taste the guacamole and adjust the seasoning and lime juice as needed. If you prefer a tangier guacamole, you can add the juice of an additional lime.

• ½ tsp paprika

• ½ tsp salt
• 2 large cucumbers
• 2 cups Cauliflower rice
• 1/2 cup sour cream
• 2 Tbsp fresh dill chopped
• 2 Tbsp lemon juice
• Salt and pepper to taste

Spicy Mayo:

• 4 Tbsp avocado oil mayonnaise
• 2 tsp hot sauce sauce adjust according to your spice preference
• 2 tsp sesame seeds for garnish
• Additional garnish ideas chopped parsley, sliced avocado, or sliced cherry tomatoes

Instructions

• Place the salmon on a plate. Drizzle with olive oil. Sprinkle paprika, garlic powder and salt and on the salmon.
• Place a layer of parchment paper on the bottom of the air fryer basket. Place the salmon pieces in the basket making sure not to have them touch. Cook at 400 degrees for 5-6 mins
• While the salmon is cooking. Cut each cucumber in half lengthwise and scoop out the seeds with a spoon, creating a hollow space in the center. You should have four cucumber “boats.”
• Place cauliflower rice in a microwave safe bowl. Cook on high for 2.5 to 3 minutes.
• Add mayo and hot sauce into a small bowl. Mix well.
• When salmon is finished cooking, flake into bite size pieces. In a medium bowl, combine the flaked salmon, Greek yogurt, fresh dill, lemon juice, salt, and pepper. Mix well to combine all the ingredients.
• Add the cooked cauliflower to the cucumber boats first.
• Next add the salmon mixture on top.
• Drizzle the spicy mayo on top.
• Add sesame seeds.
• If desired, top the salmon boats with parsley, cherry tomatoes or avocado slices for added freshness and crunch.

• 12 stuffer button mushrooms
• ½ pound spicy turkey sausage
• 1 tsp butter
• ½ cup diced sweet onions
• 1 Tbsp minced garlic
• 4 oz cream cheese
• ¼ tsp garlic powder
• ¼ tsp salt and pepper each
• ¼ cup freshly grated parmesan
• ¼ cup freshly grated gruyere
• Garnish with parsley

Instructions

• Wash mushrooms, remove stems.
• Saute onions with butter and garlic for 3-5 minutes on low to medium heat in a skillet. 3. Add turkey sausage, garlic powder and salt and pepper and cook meat through ensuring it is all crumbled as it’s cooked.
• Once cooked, turn the pan to low and add the cream cheese and gruyere and most of the parm (reserving about 2 tbsp to sprinkle on the top) and mix until all is melted and incorporated.
• Remove mixture from stove, allow to cool and store in fridge for 1-2 hours.
• After, fill each mushroom center evenly and place in a preheated oven on 350 F for 20-25 min – with a low broil for the last 3-5 minutes to add a nice crispy top to them.
• Remove and garnish with remaining parmesan and parsley.
