Creamy Lemon Pasta (one pan)

Ingredients

• 1 Tbsp – minced garlic (6 cloves)
• 1 Tbsp – salted butter
• 2 cups – heavy cream
• 1 cup – water
• ½ cup – lemon juice
• ¾ cup – shredded Parmesan
• 4 oz – cream cheese
• ½ tsp – lemon rosemary sea salt
• ¼ tsp – onion powder
• a pinch of pepper
• 1 box – Edamame Noodles

Instructions

• Mix everything together in a cooking pan simmering on low for 15-20 minutes. Until all cheese is melted.
• Meanwhile, boil noodles for 5 minutes in a separate pan. Drain. Then add to sauce and cook remaining 2-3 minutes OR you could cook all the noodles in the saucepan – simmer for 15-20 minutes. If you choose to cook the noodles in the sauce itself you may need to gradually add up to 1 cup of water to ensure proper cooking of the noodles with enough liquid. Both methods work well.
• Serve with a pinch of Parmesan, parsley, and lemon zest.

Notes

Tip: If you want it thicker you could add more Parmesan and or cream cheese. To thin add more water.

• 1 pint – cherry tomatoes

• ½ cup – coconut milk (unsweetened) or heavy cream
• ¼ cup – grated parmesan cheese
• ¼ cup – fresh basil

Instructions

• Prepare Edamame Mung Bean pasta according to its instructions.
• Place a medium saucepan over medium-high heat. Add olive oil and garlic sauce for about 30 seconds.
• Add in tomatoes, salt, and pepper and stir.
• Cook the tomatoes until softened a bit, about 5-8 minutes.
• Add the chili oil and stir.
• Add cooked pasta and mix well to coat the pasta evenly.
• Lower heat and add coconut milk and cook for about 5-8 minutes.
• Cover the saucepan, cook for 3 more minutes.
• Add parmigiana, basil, and serve.

• 1 box edamame noodles
• 1/4 cup sesame oil
• 3 tsp (6 cloves) minced garlic
• 1/4-1/2 tsp chili flakes (one could increase this to 1 tsp if they like things hot – i would suggest starting low and increasing as you taste for preference)
• 1 tsp Chinese 5 spice
• 2 tsp soy sauce or aminos
• 1 tsp white rice vinegar
• 1/2 tsp salt
• ¼ tsp honey

Top with:

• 1-2 tsp toasted sesame seeds optional
• 1-2 tsp crushed salted peanuts optional

Instructions

• Cook and prepare noodles per box.
• Heat oil on a pan on low heat and add all ingredients minus the toppings above in it. Let heat and simmer very slightly for 5 min.
• Pour oil mixture over cooked noodles and toss and top with toppings – enjoy!

• 1 red pepper seeded and sliced
• 1 yellow pepper seeded and sliced
• 1 small onion sliced
• 1 medium zucchini roughly chopped
• 2 carrots roughly chopped
• 2 large tomatoes quartered
• 3 cloves – garlic peeled
• ¼ cup – olive oil
• 1-2 tsps – salt
• ½ cup – coconut milk (for a creamer sauce) or veg/chicken broth
• 1 tsp – vinegar
• Organic Edamame & Mung Bean Fettuccine

Instructions

• Preheat the oven to 400 degrees.
• Roughly chop the vegetables and place them on a sheet pan.  Drizzle with olive oil and salt. Cook for about 35-40 minutes.  Vegetables should be soft.
• Add all the vegetables, milk or broth, and vinegar to a blender or food processor.  Blend until smooth.

2. Check your canned pumpkin 

Pure canned pumpkin purée is an affordable, natural, and nutritious ingredient. However, it’s often placed next to pumpkin pie filling on the shelves at the store. Double check your ingredient list to ensure pumpkin is the only ingredient, and avoid cans containing extra sugar, spices, and preservatives. 

3. Got leftover pumpkin? 

Don’t let it go to waste! Instead, save it for a second batch later in the week. Or, use it to make a pumpkin chocolate chip mug cake for a healthy after-dinner treat. 

4. How long does it last?

• Glass Tupperware

Ingredients

• 4 servings – low-carb noodles
• 2 Tbsps – butter
• 1 Tbsp – almond flour or gluten-free flour
• ⅔ cup – almond milk or 1 cup of cream
• ½ cup – pumpkin puree
• 1 tsp – salt
• 1 tsp – garlic powder
• ½ tsp – black pepper
• pinch of nutmeg
• ½ cup – cheddar cheese
• ¼ cup – gruyere cheese
• 1 Tbsp – parmesan cheese

Instructions

• Prepare your noodles according to the instructions on the package.
• Next in a large skillet, melt the butter.  Add the flour.  Stir until the flour is dissolved into the butter.  It will be thick.  Be careful not to burn.
• Add almond milk or cream and pumpkin.  Simmer for about 5 minutes.  Stirring often so as not to burn.
• Add salt, pepper, garlic powder, and nutmeg and mix well. 
• Add noodles and simmer for 5 minutes.
• Add cheese one at a time stirring to melt the cheese.
• Turn the stove down to low and simmer until the cheese sauce thickens.

Feel free to swap out the cheese with nutritional yeast or a vegan Parmesan alternative to make this recipe vegan. 

4. Got leftover avocado? 

Don’t let any leftover avocados go to waste! Instead, slice them up and use them to top homemade chaffles. 

5. How long does it last? 

When placed in an airtight container, homemade avocado will stay fresh in the fridge for up to 1 week.  Or, if you’re looking for a longer-lasting option, transfer it to a freezer-safe container, and store it in the freezer for up to 6 months.

Avocado Pesto

Equipment

• Food processor
• Glass Tupperware

Ingredients

• 1/4 cup cashews (not raw)
• 2 Tbsp olive oil
• 1 medium avocado (skin and seed removed)
• 2 1/2 cups basil
• 4 cloves garlic
• 5 Tbsp lemon juice (about 1 full lemon)
• 1/4 tsp black pepper
• 1/2 tsp salt
• 3/4 cup coconut milk (unsweetened) 
• 1/2 cup freshly shredded romano (one could use parmesan or asiago as well) *optional

Serving Suggestions:

• 1 box edamame noodles

Instructions

• First, add nuts to the food processor and blend.
• Add avocado, oil, milk, garlic and lemon juice to the food processor and blend until smooth.
• Add basil one cup at a time and blend in the processor with mixture until smooth.
• Taste, and add salt to preference.
• Serve with your favorite low-carb pasta (our favorites are edamame pasta or shirataki pasta)

Notes

• Add more coconut milk in ¼ cup increments if you prefer a thinner texture.
• If you omit the cheese you may want to add more salt to taste.
• Garnish ideas: with basil, parsley, more cheese, sliced cherry tomatoes or sun dried tomatoes
