This recipe is great to make in bulk and enjoy throughout the week! Once cooked and cooled, the chili garlic oil noodles can be transferred to an airtight container and stored in the fridge for up to 3-4 days. Then, just warm them up in the microwave or skillet, and they’re good as new. 

2. Include extra veggies

Enhance the nutrient profile even more by mixing in sautéed vegetables! Anything goes with dish. However, if you’re looking for inspiration, mushrooms, onions, bell peppers, and snap peas are some of our favorite  add-ins. 

3. Add protein

Chili Garlic Oil Noodles

Ingredients

• 1 box edamame noodles
• 1/4 cup sesame oil
• 3 tsp (6 cloves) minced garlic
• 1/4-1/2 tsp chili flakes (one could increase this to 1 tsp if they like things hot – i would suggest starting low and increasing as you taste for preference)
• 1 tsp Chinese 5 spice
• 2 tsp soy sauce or aminos
• 1 tsp white rice vinegar
• 1/2 tsp salt
• ¼ tsp honey

Top with:

• 1-2 tsp toasted sesame seeds optional
• 1-2 tsp crushed salted peanuts optional

Instructions

• Cook and prepare noodles per box.
• Heat oil on a pan on low heat and add all ingredients minus the toppings above in it. Let heat and simmer very slightly for 5 min.
• Pour oil mixture over cooked noodles and toss and top with toppings – enjoy!

Ingredients

Low Carb "Oats"

• ¼ cup hemp seeds
• 1 Tbsp flaxseed meal
• ¼ cup chia seeds
• 1½ Tbsp natural peanut butter
• 1 cup almond milk
• ¼ tsp – vanilla
• 1-2 full droppers Stevia Drops

Chocolate Shell

• 2 Tbsp – Sugar-Free Chocolate Chips (Lilly’s)
• ¼ tsp – Coconut Oil

Instructions

• Add Chia seeds, hemp seeds, flaxseed, peanut butter, almond milk, vanilla, and stevia to a bowl.  Mix well.  Cover and refrigerate for 30 minutes or overnight.
• Divide chia mixture into two small containers.
• Add chips and coconut oil in a small bowl.  Place the bowl in the microwave and cook for 30 minutes.  Mix and continue to melt in 30 second increments till chocolate is melted.
• Add chocolate on top of each of the chia mixture containers.  Cover and place in the freezer for 10 minutes to harden.

Ingredients

• 1 red pepper seeded and sliced
• 1 yellow pepper seeded and sliced
• 1 small onion sliced
• 1 medium zucchini roughly chopped
• 2 carrots roughly chopped
• 2 large tomatoes quartered
• 3 cloves – garlic peeled
• ¼ cup – olive oil
• 1-2 tsps – salt
• ½ cup – coconut milk (for a creamer sauce) or veg/chicken broth
• 1 tsp – vinegar
• Organic Edamame & Mung Bean Fettuccine

Instructions

• Preheat the oven to 400 degrees.
• Roughly chop the vegetables and place them on a sheet pan.  Drizzle with olive oil and salt. Cook for about 35-40 minutes.  Vegetables should be soft.
• Add all the vegetables, milk or broth, and vinegar to a blender or food processor.  Blend until smooth.
• Serve with Organic Edamame & Mung Bean Fettuccine.

Spiraled Cucumber Salad

Prep Time 15 minutes minutes

Ingredients

• 3 – mini cucumbers spiraled or sliced
• ½ cup – mini bell peppers chopped
• ¼ cup – rice vinegar
• 1 tsp – Granular Sugar Replacement (Lakanto)
• 1 tsp – honey
• ½ tsp – sesame oil
• ¼ tsp – red chili pepper flakes
• pinch of salt or to taste
• pinch of Chinese 5 spice (⅛ tsp)
• ¼ tsp – liquid aminos
• 1-2 Tbsps – crushed peanuts
• dash of toasted sesame seeds

Instructions

• Prep the veggies in one bowl.
• *To spiral the cucumber: Place cucumber between 2 chopsticks. Cut the cucumber width wise in small slices all the way down to the chopsticks. Flip the cucumber over and slice it in a diagonal all the way down to the chopsticks.
• Mix all remaining ingredients from vinegar to aminos in a bowl – then add to veggies and top with peanuts and sesame seeds.

• 4 (32 oz.) – wide mouth mason jars
• ¾ cup – olive oil
• 1 tsp – pepper
• ½ tsp – salt
• 2 Tbsp – Dijon mustard
• 2 – small zucchinis cubed small
• 24 – cherry tomatoes cut in half
• 8 – mini sweet bell pepper diced
• feta crumbles
• 4 Tbsp – nuts or seed I used sliced almonds
• 4 cups – mixed greens

Instructions

• Start by adding your olive oil, lemon juice, salt, pepper, and dijon to a mixing bowl.
• Whisk until well combined and divide evenly into 4 jars.
• Divide your zucchini up evenly between the four jars, followed by your tomatoes and diced peppers.
• Add feta crumbles to each jar, and 1 tablespoon of nuts or seeds to each jar.
• Fill the remainder of the way with mixed greens.
• Place the lids back on and tightly secure them.
• Shake, shake, shake, and enjoy!

This is a no-fuss sauce. Toss everything into a food processor, and pulse. From start to finish, it’s ready in 10 minutes or less. Avocado pesto is the perfect way for both beginners and seasoned pros to add flavor to their favorite meals. 

Even if this is your first time making pesto, you can’t go wrong. Serve it with your favorite low-carb pasta for a dish everyone will enjoy. 

Not only is it quick to prepare and easy to clean up, but the flavor is incredible! Avocado pesto is guaranteed to become a recipe you make and enjoy on repeat. 

Is Avocado Pesto Healthy? 

Let’s take a look at the main ingredients:

• Cashews
• Extra virgin olive oil 
• Avocado
• Freshly shredded Romano

Cashews, olive oil, and avocado are natural, nutritious food sources. Each has its own list of health benefits. Add them to any sauce for a smooth, creamy texture and a boost of healthy fats.

Avocado Pesto Tips

1. Serve it over edamame or shirataki noodles

While we’re not too shy to drink this avocado pesto right from the bowl, low-carb noodles make for the perfect pairing to soak it all up. Toss the two ingredients together, and you’ve got yourself a filling, nutritious meal that can be made in minutes. 

2. Pick the perfect avocado 

The key to creating the best flavor is to find the perfect avocado. You want it to be dark green in color and to have just a small amount of give when squeezed. An underripe avocado will be hard and difficult to mix, yielding a chunky, slightly bitter pesto. Meanwhile, an overripe avocado will be too soft and can result in a slightly moldy taste. So, take your time at the store to find the best one! 

3. Make it vegan 

Feel free to swap out the cheese with nutritional yeast or a vegan Parmesan alternative to make this recipe vegan. 

4. Got leftover avocado? 

Don’t let any leftover avocados go to waste! Instead, slice them up and use them to top homemade chaffles. 

5. How long does it last? 

When placed in an airtight container, homemade avocado will stay fresh in the fridge for up to 1 week.  Or, if you’re looking for a longer-lasting option, transfer it to a freezer-safe container, and store it in the freezer for up to 6 months.

Avocado Pesto

Equipment

• Food processor
• Glass Tupperware

Ingredients

• 1/4 cup cashews (not raw)
• 2 Tbsp olive oil
• 1 medium avocado (skin and seed removed)
• 2 1/2 cups basil
• 4 cloves garlic
• 5 Tbsp lemon juice (about 1 full lemon)
• 1/4 tsp black pepper
• 1/2 tsp salt
• 3/4 cup coconut milk (unsweetened) 
• 1/2 cup freshly shredded romano (one could use parmesan or asiago as well) *optional

Serving Suggestions:

• 1 box edamame noodles

Instructions

• First, add nuts to the food processor and blend.
• Add avocado, oil, milk, garlic and lemon juice to the food processor and blend until smooth.
• Add basil one cup at a time and blend in the processor with mixture until smooth.
• Taste, and add salt to preference.
• Serve with your favorite low-carb pasta (our favorites are edamame pasta or shirataki pasta)

Notes

• Add more coconut milk in ¼ cup increments if you prefer a thinner texture.
• If you omit the cheese you may want to add more salt to taste.
• Garnish ideas: with basil, parsley, more cheese, sliced cherry tomatoes or sun dried tomatoes
