What Is a Cucumber Roll?

Using a clever slicing technique, we can turn a fresh cucumber into a classic sushi roll. 

We use a potato peeler to slice long, thin strips of cucumbers. We lay out these strips, side-by-side, to create a bed of cucumber. Then we add sushi, cream cheese, and avocado, and roll it up! 

This is an easy sushi recipe that is great for beginners who have never made sushi at home. And it’s much healthier than traditional restaurant sushi!

Cucumber Sushi Tips

1. Swap out the protein

Feel free to add to or replace the salmon with any protein you like best. White fish, shrimp, or crab all work great. 

2. Make it vegetarian

For a plant-based option, swap out the salmon for tofu instead. 

3. Include different fillings

Mix and match all your favorite sushi fillings to make this recipe your own! Add to or replace the ingredients with options like asparagus, ginger, green onions, or wasabi paste for a hint of heat. 

4. Don’t forget dessert

Cucumber Sushi

Prep Time 20 minutes minutes

Ingredients

• 1-2 – long English cucumbers cut thinly ⅛ inch
• 2 oz – thinly sliced salmon
• 3-4 Tbsp – full fat softened cream cheese
• 1 Tbsp – shredded carrots
• ½ – avocado thinly sliced

Sauce

• 1 Tbsp – mayo
• ½ tsp – sriracha

Instructions

• Slice your cucumber in half lengthwise. This gives the cucumbers a flat, stable surface for further cutting.
• With the flat side of the cucumber flat against the cutting board, use a potato peeler to thinly slice the cucumbers lengthwise into long strips of cucumber. Continue slicing until there is no cucumber remaining.
• Lay the cucumber strips vertically, overlapping them ⅓ to half the width on each side.
• Dry with a paper towel or clean dish towel.
• Cut the bed of cucumber stips in half horizontally. You now have two beds of cucumber strips. (These will become two cucumber rolls).
• At the base of the cucumber bed, spread softened cream cheese. Then add shredded carrots, salmon, and avocado.
• Starting from the base, vertically roll up the ingredients into one long sushi roll.
• Repeat steps 6 and 7 for the other bed of cucumber stirps.
• Slice into classic sushi roll bites, and garnish with toasted sesame seeds. Serve with sauce.

Sheet Pan Lemon Garlic Butter Salmon Tips

1. Add sides

Thanks to the inclusion of veggies, this recipe can be served as a complete meal on its own. However, it also pairs well with sides like hidden veggie pasta, healthier mac and cheese, and low carb dinner rolls. 

2. Store leftovers

Go ahead and make an extra batch! This recipe stores well, meaning it’s great for meal prep. Once cooked and cooled, leftovers can be transferred to an airtight container and stored in the fridge for up to 5 days. 

3. Switch up the veggies

Feel free to mix and match any veggies you have on hand and like best! For the best results, we recommend using ingredients with similar baking times to prevent them from being over or undercooked. 

4. Have leftover salmon? 

Store it in the freezer for another day. Or, use it to make cucumber sweet pepper salad with air fried salmon or healthy salmon sushi waffles, and enjoy the health benefits of this nutritious fish all week.

Lemon Garlic Butter Salmon Sheet Pan

Ingredients

• 4 salmon filets about 6 ounces each
• 4 Tbsp unsalted butter melted
• 4 cloves garlic minced
• 1 lemon
• 1 tsp fresh/dried dill
• Salt and black pepper to taste
• 2 cups veggie of choice
• 2 cups asparagus spears trimmed
• Fresh parsley chopped (for garnish)

Instructions

• Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
• Zest 1 tsp of the lemon and then slice into rounds.
• In a small bowl, combine the melted butter, minced garlic, lemon zest, and dill. Stir well to combine.
• Place the salmon filets on the prepared baking sheet and season them with salt and black pepper to taste.
• Brush the garlic butter mixture generously over the salmon filets, making sure to coat them evenly.
• Arrange the lemon slices on top of the salmon filets and scatter the veggies around the salmon on the baking sheet.
• Drizzle some of the remaining garlic butter mixture over the asparagus and radishes. Season them with a pinch of salt and black pepper.
• Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Cucumber Bell Pepper Salad Tips 

1. Swap out the protein

Not a fan of salmon? Replace it with any other protein you like best. Tuna, white fish, or lemon garlic chicken would all make great options. 

2. Include extra mix-ins

Add extra flavor and crunch with additional ingredients like nuts, seeds, sliced avocado, or more vegetables like tomatoes, mushrooms, onion, or zucchini. 

3. Prepare in advance

Prepare the salad and salmon for easy meals throughout the week, and store them in separate airtight containers in the fridge. The salad will stay fresh for one to two days, and the salmon will keep for up to three to four days. 

4. Bulk up your meal

Ingredients

• 1 – English cucumber
• 1 bag – mini bell peppers (2 lb bag)
• 2 6 oz positioned salmon filets  (the fish counter at your grocery store will cut to size)
• 2 tsp olive oil
• ½ tsp salt (¼ tsp per salmon filet)

Dressing:

• 1½ Tbsp everything but the bagel seasoning
• 1 Tbsp Trader Joe's Chili Onion Crunch or chili sauce
• 2 Tbsp sesame oil
• 2 Tbsp rice vinegar
• 1 tsp fresh minced ginger (or powder)
• .25 tsp garlic powder
• 1/8 tsp salt

Instructions

Dressing:

• In a bowl whisk all ingredients together

Salad:

• Brush each salmon filet (both sides) with olive oil and sprinkle them with salt.  Place on parchment paper or aluminum foil and place them in your air fryer.  Cook at 390 degrees for 8-10 minutes. (internal temperature should be 145 and the filet should flake easily with a fork.)
• While the salmon is cooking. Slice peppers and cucumbers and place in medium sized bowl.
• Add dressing, seasoning, and chili onion crunch and mix well.
• Enjoy!

What is a Sushi Waffle? 

A fairly new creation, sushi waffles are a unique take on traditional sushi rolls. Instead of featuring rice wrapped around fillings, the carb source is turned into a waffle and topped with all the same ingredients you expect to find in sushi. However, instead of using white sushi rice, we transformed our recipe into a low-carb sushi waffle, using cauliflower rice instead! 

The base is crisp and cheesy while the toppings are full of flavor and protein. The end result is a satisfying meal loaded with nutrients and flavor that is guaranteed to fill you up without weighing you down. 

Is this Sushi Waffle Healthy? 

Let’s look at the main ingredients: 

• Cauliflower rice
• Cucumber
• Avocado
• Salmon 

Cucumber, avocado, and salmon are natural, nutritious food sources. Each have their own list of health benefits. The trick to making this sushi waffle healthy is substituting the white rice for cauliflower rice. Why?

Common sushi rice is composed of carbs and contains at least 4 teaspoons of sugar for every 4 cups of rice.

Sushi Waffle Tips

1. Make a large waffle 

We use a mini waffle maker and work in batches for individual portions. However, to save time, you can add the entire waffle mixture to a large waffle maker, and divide the cooked waffle in two. 

2. Make it vegetarian 

Omit the salmon, and replace it with tofu to keep this sushi waffle plant-based without missing out on the protein. 

3. Use different toppings 

Mix and match all your favorite sushi roll ingredients as toppings! For instance, pickled onions, shredded carrots, seaweed, ginger, wasabi, mushrooms, spinach, and asparagus would all taste great. 

4. Enjoy right away

This recipe does not store well and is likely to become soggy when kept in the fridge. As a result, it’s best enjoyed right away while the waffle is still warm.

Ingredients

Waffle:

• ½ cup cauliflower rice
• 1 Tbsp mozzarella cheese
• 1 egg white
• ½ tsp sesame oil

Toppings:

• 2 Tbsp cucumber diced
• ¼ avocado sliced
• 1 Tbsp green onion diced
• 3 Tbsp cubed salmon can sub other fish, crab, or shrimp

Sauce:

• 1 Tbsp mayo
• ½ tsp sriracha

Garnish:

• toasted seasame seeds

Instructions

• Mix the waffle makings in a bowl and place half in a mini waffle maker for 2-3 minutes or until fully cooked and crisp. Set aside.
• Add the diced veggies and avo on top, add the fish and green onion.
• Mix sauce then drizzle over waffle.
• Top with sesame seeds.
