• I pd of skinless salmon
• 1 Tbsp olive oil
• ½ tsp paprika
• ½ tsp garlic powder
• ½ tsp salt
• 2 large cucumbers
• 2 cups Cauliflower rice
• 1/2 cup sour cream
• 2 Tbsp fresh dill chopped
• 2 Tbsp lemon juice
• Salt and pepper to taste

Spicy Mayo:

• 4 Tbsp avocado oil mayonnaise
• 2 tsp hot sauce sauce adjust according to your spice preference
• 2 tsp sesame seeds for garnish
• Additional garnish ideas chopped parsley, sliced avocado, or sliced cherry tomatoes

Instructions

• Place the salmon on a plate. Drizzle with olive oil. Sprinkle paprika, garlic powder and salt and on the salmon.
• Place a layer of parchment paper on the bottom of the air fryer basket. Place the salmon pieces in the basket making sure not to have them touch. Cook at 400 degrees for 5-6 mins
• While the salmon is cooking. Cut each cucumber in half lengthwise and scoop out the seeds with a spoon, creating a hollow space in the center. You should have four cucumber “boats.”
• Place cauliflower rice in a microwave safe bowl. Cook on high for 2.5 to 3 minutes.
• Add mayo and hot sauce into a small bowl. Mix well.
• When salmon is finished cooking, flake into bite size pieces. In a medium bowl, combine the flaked salmon, Greek yogurt, fresh dill, lemon juice, salt, and pepper. Mix well to combine all the ingredients.
• Add the cooked cauliflower to the cucumber boats first.
• Next add the salmon mixture on top.
• Drizzle the spicy mayo on top.
• Add sesame seeds.
• If desired, top the salmon boats with parsley, cherry tomatoes or avocado slices for added freshness and crunch.

Instructions

Prepare the Ingredients:

• Drain the mozzarella cheese balls, artichoke hearts and olives if they were stored in brine.
• Cut the soppressata, salami or pepperoni into half moon pieces if they are not already sliced.

Assemble the Skewers:

• 1-2 – long English cucumbers cut thinly ⅛ inch
• 2 oz – thinly sliced salmon
• 3-4 Tbsp – full fat softened cream cheese
• 1 Tbsp – shredded carrots
• ½ – avocado thinly sliced

Sauce

• 1 Tbsp – mayo
• ½ tsp – sriracha

Instructions

• Slice your cucumber in half lengthwise. This gives the cucumbers a flat, stable surface for further cutting.
• With the flat side of the cucumber flat against the cutting board, use a potato peeler to thinly slice the cucumbers lengthwise into long strips of cucumber. Continue slicing until there is no cucumber remaining.
• Lay the cucumber strips vertically, overlapping them ⅓ to half the width on each side.
• Dry with a paper towel or clean dish towel.
• Cut the bed of cucumber stips in half horizontally. You now have two beds of cucumber strips. (These will become two cucumber rolls).
• At the base of the cucumber bed, spread softened cream cheese. Then add shredded carrots, salmon, and avocado.
• Starting from the base, vertically roll up the ingredients into one long sushi roll.
• Repeat steps 6 and 7 for the other bed of cucumber stirps.
• Slice into classic sushi roll bites, and garnish with toasted sesame seeds. Serve with sauce.

Ingredients

• 6 eggs
• ½ cup sliced cherry tomatoes (plus more for garnish)
• ½ cup sliced mushrooms
• 1 cup spinach
• 1 cup shredded cheese divided into ¾ cup and ¼ cup (cheddar, mozzarella, or your preferred cheese)
• ¼ cup full fat milk or heavy cream or half and half
• Salt and pepper to taste
• ½ tsp onion powder
• ½ tsp garlic powder
• Crumbled feta cheese for garnish

Instructions

• Preheat your air fryer to 350°F (175°C) for a few minutes.
• In a bowl, crack the eggs and whisk them together until well beaten.
• Add the sliced cherry tomatoes, sliced mushrooms, spinach, milk, ¾ cup of cheese, salt, pepper, onion powder and garlic powder to the bowl. Mix well to combine all the ingredients.
• Grease a small round cake pan or a small baking dish that fits in your air fryer basket with cooking spray.
• Pour the egg mixture into the greased pan.
• Place the pan in the preheated air fryer basket.
• Cook the frittata in the air fryer for about 12-15 minutes or until the eggs are set and the top is golden brown.

• 1 small avocado
• ⅓ cup sour cream
• ¼ cup packed Cilantro
• 2 Tbsp lime juice
• salt and pepper to taste

Instructions

• Start by washing your Zucchini.
• Slice off the top and bottom and discard, then proceed to slice into 1/4-inch thick rounds.
• You will need 3 bowls: in the first combine the first seven dry ingredients; in the second mix the two eggs, in the third parmesan cheese.
• Take your Zucchini and dredge it in the egg.
• Then in the flour, be sure to cover the whole piece.
• Lastly in the cheese. Again be sure to cover the whole Zucchini.
• Once you cover the Zucchini, place it on your baking sheet. You will want to place a wire rack on top of the baking sheet. This allows for baking on both sides without flipping. If you don’t have the option then flip your chips half way when you bake them.
• Bake at 425 for 18-20 minutes until crisp and golden.
• If you choose to fry in oil instead – Add 2/3 cups of olive oil to a pan, I suggest using a large cast iron skillet, you just want the oil to barely cover the bottom so if you have a smaller pan use less (see notes).
• Lay your Zucchini in the pan be sure not to over lap and cook for about a minute and a half to two minutes.
• Remove from the pan and place on a plate lined with a paper towel.
• Continue with your batches, adding oil as needed. After it's all done enjoy with one of your favorite dipping sauces!

• 1 – large low-carb tortilla
• 2-3 oz – shredded chicken breast
• 1-2 Tbsp – pesto
• ½ cup – mozzarella cheese
• ¼ cup – sliced cherry tomatoes
• ¼ cup – spinach
• 1-2 Tbsp – fresh basil diced
• 2 Tbsp – balsamic glaze

Instructions

• Starting from the outer edge, cut the tortilla in a straight line until you reach the center.
• Envision the tortilla divided into four quadrants. The cut separates quadrants 3 and 4, while the first two quadrants remain above.
• Fill the top left quadrant (Q1) of the tortilla with cooked shredded chicken, pesto, and ¼ cup of mozzarella.
• Fill the top right quadrant (Q2) with sliced tomatoes and balsamic glaze.
• Fill the left bottom quadrant (Q3) with mozzarella.
• Fill the bottom right quadrant (Q4) with spinach, basil, and the remaining mozzarella.
• Let’s fold this tortilla into a triangle.

  a. Fold quadrant 3 (Q3) over quadrant 1 (Q1), creating a 3/4 circle shape.

  b. Fold quadrant 1 (Q1) over quadrant 2 (Q2), resulting in a half-circle shape.

  c. Finally, fold quadrant 2 (Q2) over quadrant 4 (Q4), forming a triangle (1/4 circle shape).
• Cook on a flat skillet on low to medium heat for about 5 minutes on each side or until the cheese is melted and the tortilla is slightly toasted on each side.
• Serve with a drizzle of balsamic glaze, additional tomatoes and basil leaves.

It’s a pizza! But instead of it being made with a sugar-laden, flour-rich crust, the base comes together with a mixture of milk, cheese, and eggs.

The end result is a golden, crisp crust that tastes as good as the real deal but is full of protein, nutrients, and healthy fats that satisfy your cravings while leaving you feeling full and energized.

Let’s look at the main ingredients: 

• Cream cheese

• Mozzarella cheese

Pizza Casserole Tips 

1. Add protein

We kept this recipe vegetarian-friendly, but you can easily add extra protein to the toppings. For instance, pepperoni, sausage, ham, and chicken all make great options. 

2. Saute your toppings

Before adding your toppings to the pizza, saute them in a cast-iron pan with avocado oil. Don’t forget to add a little salt. Cooking your toppings will do more to bring out their flavor.

3. Make it a meal 

This pizza casserole is filling enough to be served on its own but can also be paired with all of your favorite sides like Lemon Parmesan Salad  or Spiraled Cucumber Salad for extra fiber and nutrients. 

4. Meal prep

With 8 slices per casserole, this dish is excellent to prepare in advance for easy meals throughout the week. Transfer leftovers to an airtight container, and keep them stored in the fridge for up to 5 days. Then, just reheat individual portions in the microwave or oven, and enjoy! 

5. Use a different sauce

We stuck with classic pizza flavors, using low-carb pizza sauce. However, feel free to get creative with different bases like sugar-free barbecue sauce, buffalo sauce, alfredo sauce, or avocado pesto. 

6. Leftover cream cheese? 

Don’t toss it out! Instead, use it to make a low carb cookie skillet, chewy fudge brownies, or chocolate chip cookies for dessert.

• Glass Baking Dish 9in x 13in
• Food processor

Ingredients

• 4 oz – cream cheese softened
• 4 – large eggs
• ⅓ cup – heavy cream
• ¼ + 1 cup – Parmesan cheese grated and divided
• ½ tsp – minced garlic
• ½ tsp – dried oregano
• 2 cups – mozzarella cheese shredded and divided
• ½ cup Raos Roasted Garlic Tomato Sauce low carb pizza sauce
• Pizza toppings (mushroom, pepperoni, sausage, peppers, etc.) optional
• avocado oil

Instructions

• Preheat the oven to 350 F.
• Grease 13X9 baking dish with avocado oil
• Mix cream cheese and eggs until smooth with an electric mixer or food processor.
• Add cream, ¼ cup of Parmesan, garlic and oregano. Blend until combined
• Sprinkle 1 cup Parmesan and 1 cup of mozzarella cheese into the bottom of the greased baking pan.
• Pour egg mixture over cheese.
• Bake for 30 minutes or until the crust is turning golden and starting to puff up.
• Spread sauce. Add remaining 1 cup mozzarella and any other toppings if desired.
• Broil on high for a few minutes until the top is browned and bubbly.
• Let sit for a few minutes before cutting.

Cucumber Bell Pepper Salad (salmon)

Ingredients

• 1 – English cucumber
• 1 bag – mini bell peppers (2 lb bag)
• 2 6 oz positioned salmon filets  (the fish counter at your grocery store will cut to size)
• 2 tsp olive oil
• ½ tsp salt (¼ tsp per salmon filet)

Dressing:

• 1½ Tbsp everything but the bagel seasoning
• 1 Tbsp Trader Joe's Chili Onion Crunch or chili sauce
• 2 Tbsp sesame oil
• 2 Tbsp rice vinegar
• 1 tsp fresh minced ginger (or powder)
• .25 tsp garlic powder
• 1/8 tsp salt

Instructions

Dressing:

• In a bowl whisk all ingredients together

Salad:

• Brush each salmon filet (both sides) with olive oil and sprinkle them with salt.  Place on parchment paper or aluminum foil and place them in your air fryer.  Cook at 390 degrees for 8-10 minutes. (internal temperature should be 145 and the filet should flake easily with a fork.)
• While the salmon is cooking. Slice peppers and cucumbers and place in medium sized bowl.
• Add dressing, seasoning, and chili onion crunch and mix well.
• Enjoy!

Instead, we use an air fryer to achieve perfectly crispy skin without the need for breading. Turn this appetizer into a complete meal with healthy sides like veggie sticks, lemon Parmesan salad, hidden veggie pasta, or low-carb macaroni and cheese. 

2. Bake them instead

No air fryer? No problem! Bake your wings in the oven instead. To do so, arrange them in a single layer on a greased baking sheet, and place them in the oven, rotating them roughly every 20 minutes until they’re cooked through. They won’t be quite as crispy, but they’ll still taste incredible! (Do you own a convection oven? Turn the convection fan on.)

3. Use different seasonings

Not a fan of lemon pepper? Swap out the spices with any you like best! 

5. Rest the chicken wings

It can be tempting to dig in right away, but you’ll want to set your wings aside for at least 5 minutes after removing them from the air fryer. This helps redistribute the juices, ensuring they stay tender and juicy.

• 1½ lbs – chicken wings
• 1 Tbsp – avocado oil

• Pat wings dry.
• Toss wings with oil, lemon pepper, lemon zest, and garlic.
• Place wings in a single layer in the air fryer basket.
• Set the air fryer to 410 F.  Cook for 10 minutes.
• Flip and add a meat thermometer.  Cook another 8-10 minutes until the internal temperature is 165 F.
• Enjoy your crispy and tangy chicken wings.
• Optional: add your favorite dipping sauce or sprinkle fresh lemon juice for an extra kick.
